Recipe #3

Apple Cinnamon Pecan Oatmeal

2 cups water

3/4 cup apple juice

1 cup steel-cut oats

1/2 cup regular barley (quick cooking)

1/2 Tbs ground cinnamon

1/8 tsp ground ginger

1/8 tsp salt

1/4 cup packed brown sugar

1/3 cup chopped pecans (I use salted)

2 green apples, diced (I use Granny Smith)

In a small or medium saucepan, combine water, apple juice, oats, barley, cinnamon, ginger, and salt.

Simmer over medium low heat for about 30 mins. You will need to stir continually. Just before removing from heat, stir in brown sugar.

When serving oatmeal, top with diced apples and chopped pecans.
